Chocolate Mini Treats

Enjoy these fantastic paleo treats and you can stay on your gluten and dairy free diet over the holidays and keep feeling great!

Ingredients

  • 2/3 cup coconut oil melted
  • ½ cup crunchy almond butter
  • ¼ cup unsweetened raw cocoa powder
  • ¼ cup maple syrup or to taste
  • ¼ cup shredded coconut
  • pinch of sea salt
  • 3-4 drops pure peppermint extract (optional)

Directions

  1. Melt coconut oil. In a medium bowl add almond butter, melted coconut oil, cocoa powder, salt and maple syrup and mint extract (if using) and stir until smooth.
  2. Stir in shredded coconut. While still runny, transfer mixture to paper cupcake holders or candy molds.
  3. Place in freezer to firm up for 20 minutes.
